lunch and deep thoughts
So. Lightly sauteed an ear of corn & three carrots in olive oil with a lot of basil and a clove of garlic; easily a perfect summer salad upon throwing in a large handful of blanched green beans and a splash of apple cider vinegar. Eaten with cool, salty feta or some salted & peppered ricotta or just plain, it was buttery and sweet and refreshing.
I will be stocking up on corn, then, as well as peaches and all the sweet golden things summer has to offer.
